DLMimi_BrusselSprouts_MAINBrussel sprouts are my all time favorite autumn vegetable, so I cook them any chance I get. My favorite way to prepare them is to roast them in the oven. Not only is roasting them a great way to extract flavor, its also quite easy and time efficient.

I start by preheating the oven to 400 degrees. I like to slice them in half, so they cook evenly and fully through (sliced shallots or onions are also optional for extra flavor.) The next step is to lightly toss them in olive oil, salt, cumin, and black pepper and spread them across a baking sheet. Depending on the oven, they usually cook for about 20-25 minutes, or until they are golden brown on the edges. The smells from the oven are sensational and make me feel fully submersed into fall.

The brussel sprouts can either be served as is, or you could toss them with an aged balsamic vinegar for a sweeter flavor.
